PREPARATION
Rinse the quinoa thoroughly under cold water, then combine it with water in a pot. Bring to a simmer, cover, and cook until the quinoa is fluffy and water is absorbed, about 15 minutes.
While the quinoa cooks, thinly slice the seitan into strips or medallions and set aside.
