Seared Salmon with Garlic Green Beans and Brown Rice
Enjoy a light yet satisfying dinner featuring a seared salmon fillet complemented by garlicky green beans and a side of fluffy brown rice. The natural richness of the fish pairs perfectly with the vibrant flavors of garlic and lemon, while the brown rice adds a comforting, wholesome touch.
INGREDIENTS
6 oz Salmon Fillet
1 cup Green Beans
1/2 cup Brown Rice, cooked
2 cloves Garlic
1 tbsp Lemon Juice
Salt (pinch)
Black Pepper (pinch)
PREPARATION
Rinse the salmon fillet and pat it dry with a paper towel. Season both sides with salt and black pepper.
Heat a nonstick skillet over medium-high heat. Once hot, place the salmon skin-side down (if applicable) and sear for about 3-4 minutes until a crispy crust forms. Carefully flip and cook for an additional 3-4 minutes until the salmon is just cooked through.
While the salmon is cooking, bring a small pot of water to a boil and add the green beans. Blanch them for about 3-4 minutes until tender-crisp, then drain.
In a separate pan, lightly sauté the minced garlic (from 2 cloves) in a dry nonstick pan or a minimal amount of cooking spray for about 1 minute until fragrant. Add the drained green beans and toss gently to combine with the garlic. Finish with a squeeze of lemon juice.
Prepare 1/2 cup of cooked brown rice according to the package instructions if not already done.
Plate the seared salmon alongside the garlic green beans and brown rice. Optionally, drizzle a little extra lemon juice over the salmon for added brightness and serve immediately.
