INGREDIENTS
6 oz Chicken Breast
150 g Baby Potatoes
1 tsp Olive Oil
1 clove Garlic
2 sprigs Fresh Rosemary
2 sprigs Fresh Thyme
Salt and Pepper to taste
PREPARATION
Preheat your oven to 425°F.
Pat the chicken breast dry and season with salt, pepper, chopped rosemary, and thyme.
Place the chicken on a baking tray and roast in the oven for about 20-25 minutes, or until the internal temperature reaches 165°F.
Meanwhile, boil the baby potatoes in salted water until tender, about 10-12 minutes. Drain and cool slightly.
Place the boiled potatoes on a baking sheet and gently press each one with the back of a fork to slightly smash them.
Drizzle the smashed potatoes with olive oil, minced garlic, additional rosemary and thyme, and season with salt and pepper.
Return the potatoes to the oven and bake for an additional 15 minutes, or until the edges become crispy.
Serve the herb-roasted chicken alongside the crispy garlic smashed potatoes for a balanced and delicious meal.
