Enjoy a hearty meal featuring succulent herb-roasted chicken paired with crispy, garlic-infused smashed potatoes. This dish brings together aromatic herbs with a satisfying crunch from the potatoes, making it a delicious dinner option that is both balanced and flavorful.
INGREDIENTS
6 oz Chicken Breast (170g)
150g Baby Potatoes
1 tsp Olive Oil
2 Garlic Cloves
2 Tbsp Mixed Fresh Herbs
Pinch of Salt and Pepper
PREPARATION
Preheat the oven to 425°F (220°C).
Wash the baby potatoes and place them in a pot. Boil until they are fork-tender, about 10-15 minutes.
While the potatoes boil, season the chicken breast with salt, pepper, and finely chopped mixed fresh herbs.
Place the chicken breast on a baking tray and roast in the oven for about 20-25 minutes, or until the internal temperature reaches 165°F (74°C).
Drain the potatoes and gently smash them with the back of a fork or potato masher.
Heat the olive oil in a skillet over medium-high heat. Add the smashed potatoes and minced garlic. Sauté until the potatoes become crispy and golden on the edges, about 5-7 minutes.
Serve the herb-roasted chicken alongside the crispy garlic smashed potatoes.
