2 cups Cauliflower Rice (~200g)
1/2 cup Kimchi (~100g)
6 ounces Extra-Firm Tofu (~170g)
2 Large Eggs
1 Garlic clove
1 teaspoon Sesame Oil
2 stabs Scallions
Salt & Pepper to taste
PREPARATION
Press the tofu to remove excess moisture and cut it into small cubes.
Heat a non-stick skillet over medium-high heat. Add the tofu cubes and cook until they are golden and crispy on all sides. Remove and set aside.
In the same skillet, add the sesame oil and sauté minced garlic until fragrant.
Add the cauliflower rice to the skillet and stir-fry for 3-4 minutes until it starts to soften.
Stir in the kimchi and continue cooking for another 2 minutes, allowing the flavors to meld.
Push the mixture to one side of the skillet and crack the eggs into the empty space. Scramble them gently until just set, then mix them into the rice.
Return the crispy tofu to the skillet, stirring everything together. Season with salt and pepper to taste.
