INGREDIENTS
5 oz Salmon Fillet
100 g Sweet Potato
90 g Asparagus
0.5 tbsp Olive Oil
Salt and Pepper to taste
PREPARATION
Preheat your oven to 400°F.
Peel and cut the sweet potato into 1/2-inch thick rounds or cubes. Toss with a small drizzle of olive oil, salt, and pepper.
Spread the sweet potato on a baking sheet and roast for about 20-25 minutes until tender and lightly caramelized.
While the sweet potato roasts, trim the asparagus ends and toss with a little salt and pepper. Optionally, if desired, add them to the baking sheet during the last 10 minutes of sweet potato roasting.
Season the salmon fillet with salt and pepper on both sides.
Heat a non-stick skillet over medium-high heat and add half of the olive oil. Once the oil is shimmering, place the salmon fillet skin-side down. Sear for 3-4 minutes, then flip and cook for another 3-4 minutes until the salmon is just cooked through.
Plate the seared salmon alongside the roasted sweet potato and asparagus. Serve immediately.
