PREPARATION
Preheat your oven to 400°F. Toss the baby potatoes with olive oil, a pinch of salt and pepper, and half of the chopped fresh herbs.
Spread the potatoes on a baking sheet and roast in the oven for 25-30 minutes until they are golden and tender.
While the potatoes roast, season the top sirloin steak with salt and pepper on both sides.
Heat a skillet over medium-high heat. Sear the steak for about 3-4 minutes per side for medium-rare, adjusting time as needed for desired doneness.
In the last minute of cooking, add the garlic (minced) and unsalted butter to the pan. Spoon the melted garlic herb butter over the steak.
