Salt & Pepper to taste
PREPARATION
Preheat your oven to 400°F. Peel (if preferred) and dice the sweet potato into bite-sized cubes.
Toss the sweet potato cubes with half the teaspoon of olive oil, salt, and pepper. Spread them on a baking sheet and roast for about 20-25 minutes, or until tender and slightly crispy.
While the sweet potato roasts, dice the red bell pepper and yellow onion. In a non-stick skillet, heat the remaining olive oil over medium heat. Sauté the diced bell pepper, onion, and fresh spinach until softened, about 5-7 minutes.
Add the turkey sausage link (sliced into rounds) to the skillet and cook for an additional 3-4 minutes until lightly browned.
