1 small Sweet Potato
1 tbsp Maple Syrup
0.5 tbsp Olive Oil
2 sprigs Fresh Rosemary
2 sprigs Fresh Thyme
2 cloves Garlic

PREPARATION
Preheat your oven to 400°F (200°C).
In a small bowl, mix together the maple syrup and olive oil. Set aside.
Prepare the sweet potato by washing and cutting it into 1/2-inch thick rounds or cubes. Toss with half of the maple-olive oil mixture, a pinch of salt and pepper, and spread evenly on a baking sheet.
Place the chicken breast on a separate baking tray. Rub it with minced garlic, chopped rosemary and thyme leaves (removed from sprigs), and season with salt and pepper.
Drizzle the remaining maple-olive oil mixture over the chicken breast.
Roast both trays in the oven. Bake the chicken for about 20-25 minutes until fully cooked, and the sweet potatoes for 25-30 minutes until tender and slightly caramelized, flipping the potatoes halfway through.
