INGREDIENTS
6 oz Salmon Fillet
1 cup Mixed Rainbow Vegetables
1 tsp Olive Oil
1 clove Garlic
1 tbsp Fresh Parsley
1 tsp Fresh Dill
Salt and Black Pepper to taste
PREPARATION
Preheat your oven to 425°F and line a sheet pan with parchment paper.
Arrange the 6 oz salmon fillet on one side of the sheet pan. In a small bowl, combine chopped fresh parsley, dill, minced garlic, salt, and pepper.
Lightly drizzle the salmon with 1 teaspoon of olive oil and gently press the herb mixture onto the top of the salmon fillet to form a crust.
On the other side of the sheet pan, spread out 1 cup of mixed rainbow vegetables. Drizzle with a small amount of olive oil, and season lightly with salt and pepper.
Place the sheet pan in the oven and roast for 12-15 minutes, until the salmon is cooked through and the vegetables are tender with slight charring.
Remove from the oven, and serve immediately while hot. Enjoy the crisp texture of the herb crust with the fresh, vibrant flavors of the roasted vegetables.
