PREPARATION
Preheat your oven to 400°F. Wash and dice the sweet potato into small cubes for even cooking.
Toss the sweet potato cubes with a teaspoon of olive oil, salt, and pepper. Spread them on a lined baking sheet and roast for about 20-25 minutes until tender and slightly crispy, stirring halfway through.
