0.5 tsp Smoked Paprika
Salt & Pepper to taste
2 tbsp Fresh Parsley, chopped (8g)
PREPARATION
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a food processor, combine the cooked chickpeas, cooked quinoa, egg, almond flour, and cottage cheese. Pulse until the mixture is well incorporated but still retains some texture.
Add in the cumin, smoked paprika, salt, pepper, and chopped parsley to the mixture. Pulse a few more times to evenly distribute the spices.
Scoop the mixture using a tablespoon size scoop and form into small, bite-sized balls, placing them evenly on the prepared baking sheet.
