Herb-Roasted Chicken Legs with Garlic Parmesan Spaghetti
Savor the perfect balance of aromatic herbs and savory garlic as tender, herb-roasted chicken legs pair beautifully with a light serving of garlic Parmesan spaghetti. This dish delivers a delightful combination of crunchy skin, juicy meat, and al dente pasta infused with rich, umami flavors.
INGREDIENTS
1 piece Chicken Leg (~150g)
1 cup cooked Spaghetti (~140g)
1 teaspoon Olive Oil
2 cloves Garlic
2 tablespoons grated Parmesan Cheese
1 tablespoon Mixed Fresh Herbs (Rosemary & Thyme)
Salt and Pepper to taste
PREPARATION
Preheat your oven to 400°F (200°C).
Pat the chicken leg dry with a paper towel. Rub it with olive oil, salt, pepper, and chopped mixed fresh herbs.
Place the chicken leg on a baking sheet and roast in the preheated oven for about 35-40 minutes, or until the skin is crispy and the internal temperature reaches 165°F (74°C).
While the chicken roasts, bring a pot of salted water to a boil and cook the spaghetti according to package instructions until al dente. Drain the pasta, reserving a splash of the pasta water.
In a small pan, sauté minced garlic in a tiny amount of olive oil over medium heat until fragrant, about 1 minute. Toss the drained spaghetti in the garlic oil along with the grated Parmesan cheese. If needed, add a little reserved pasta water to create a light sauce.
Plate the garlic Parmesan spaghetti and serve the herb-roasted chicken leg on top or on the side. Garnish with an additional sprinkle of fresh herbs if desired and serve warm.
