Creamy Cauliflower Mash with Roasted Garlic
Savor the comforting and creamy texture of this cauliflower mash, enriched with the deep, savory flavor of roasted garlic and a tangy twist from nonfat Greek yogurt. Finished off with a sprinkle of nutritional yeast for a cheesy note, this dish is satisfying and versatile enough for breakfast, lunch, or dinner.
INGREDIENTS
1 large head Cauliflower (~600g)
1 head Roasted Garlic (~40g)
1 cup Nonfat Greek Yogurt (~245g)
2 tablespoons Nutritional Yeast (~16g total)
1 tablespoon Olive Oil
0.5 teaspoon Salt
0.25 teaspoon Black Pepper
PREPARATION
Preheat your oven to 400°F.
Slice the top off a head of garlic, drizzle lightly with olive oil, wrap in foil, and roast in the oven for about 30-35 minutes until soft and caramelized.
While the garlic roasts, wash and chop the cauliflower into florets. Steam or boil the cauliflower until tender, about 10-12 minutes.
Transfer the cooked cauliflower to a blender or use an immersion blender. Squeeze the roasted garlic cloves out of their skins and add to the cauliflower.
Add the nonfat Greek yogurt, nutritional yeast, remaining olive oil, salt, and pepper to the blender. Blend until smooth and creamy.
Taste and adjust seasoning as needed. Serve warm as a creamy mash that pairs well with your favorite protein or as a standalone comforting side.
