Enjoy a comforting, baked 'mac' dish that uses tender cauliflower in a creamy cheesy sauce, topped with crunchy, seasoned chickpea crumbs. This lighter twist on a classic meal is both satisfying and nutrient-packed, perfect for a wholesome lunch or dinner.
INGREDIENTS
2 cups Cauliflower (200g)
1/2 cup Low-Fat Greek Yogurt (120g)
1/4 cup Reduced-Fat Cheddar Cheese (28g)
1/2 cup Canned Chickpeas (125g)
2 tbsp Nutritional Yeast
1 tsp Olive Oil
1/2 tsp Garlic Powder
1/2 tsp Onion Powder
1/2 tsp Paprika
Salt and Pepper to taste
PREPARATION
Preheat the oven to 400°F (200°C).
Steam the cauliflower until tender, about 8-10 minutes. Once cooked, transfer it to a blender and puree until smooth.
In a bowl, mix the cauliflower puree with low-fat Greek yogurt, reduced-fat cheddar cheese, nutritional yeast, garlic powder, onion powder, paprika, salt and pepper until a creamy sauce forms.
Pour the cauliflower cheese sauce into a lightly greased baking dish.
Drain and rinse the canned chickpeas. Toss them with olive oil, a pinch of salt, and extra paprika if desired.
Spread the chickpeas evenly over the cauliflower sauce to form a crispy topping.
Bake for 20-25 minutes until the top is golden and crispy. Remove from the oven and let cool slightly before serving.
