INGREDIENTS
4 slices Turkey Bacon (112g)
1 large Whole Egg (50g)
1 large Egg White (33g)
2 ounces Roasted Turkey Breast (56g)
2 tbsp Nonfat Greek Yogurt (30g)
1 tsp Olive Oil (5g)
2 cups Romaine Lettuce (80g)
2 tbsp Fresh Herbs (Parsley & Dill, 10g)
1 clove Garlic (3g)
PREPARATION
Crisp the turkey bacon in a skillet over medium heat until browned and slightly crispy. Remove and set aside on paper towels to drain.
In the same skillet, lightly scramble the whole egg and egg white together until just set. Season with a pinch of salt and pepper if desired.
In a small bowl, combine the nonfat Greek yogurt, olive oil, minced garlic, and chopped fresh herbs to create the herb aioli. Mix well until smooth.
Wash and pat dry the romaine lettuce leaves. Use the leaves as the base for layering.
Assemble the stack by placing the scrambled eggs on a lettuce leaf, followed by the roasted turkey breast slices, and then the crispy turkey bacon.
Drizzle the herb aioli over the top of the stack or serve on the side as a dipping sauce.
Garnish with additional herbs if desired and enjoy immediately.
