INGREDIENTS
1 piece Chicken Thigh (120g, skinless, boneless)
40g dry Orzo Pasta
50g Wild Mushrooms
1 tsp Olive Oil
1 clove Garlic
1 tbsp Fresh Mixed Herbs
2 tbsp Grated Parmesan Cheese
PREPARATION
Preheat your oven to 400°F (200°C).
Pat the chicken thigh dry and season both sides with salt, pepper, and half of the mixed herbs.
In an oven-safe skillet, heat the olive oil over medium heat and add the chicken thigh, skin-side down if applicable, cooking until golden (about 4-5 minutes per side).
Add the minced garlic and remaining herbs to the skillet, stirring briefly to infuse the oil.
Transfer the skillet to the preheated oven and bake the chicken for 15-18 minutes until fully cooked.
Meanwhile, cook the orzo according to package instructions. In the last few minutes of cooking, add the wild mushrooms to the boiling water to soften.
Drain the orzo and mushrooms, then combine with a drizzle of olive oil and seasoning to taste.
Plate the orzo and mushroom mixture, then lay the herb-garlic chicken thigh on top. Sprinkle the grated Parmesan cheese over the dish before serving.
