INGREDIENTS
200g Cauliflower Rice
1 large Egg
1/2 cup shredded Part-Skim Mozzarella Cheese
1/4 cup Almond Flour
2 tablespoons Grated Parmesan Cheese
2 cloves Garlic
1 teaspoon Mixed Dried Italian Herbs
Salt and Pepper to taste
PREPARATION
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Lightly steam or microwave the cauliflower florets until they are tender, then pulse in a food processor to create a rice-like texture if starting with whole cauliflower. Measure out 200 grams of cauliflower rice.
In a large bowl, combine the cauliflower rice, beaten egg, shredded mozzarella, almond flour, grated Parmesan, minced garlic, mixed dried herbs, salt, and pepper.
Mix thoroughly until all ingredients are well incorporated. The mixture should be sticky and formable.
Transfer the mixture onto the prepared baking sheet and press it into a flat, even rectangle about 1/2-inch thick.
Bake the mixture in the preheated oven for 18-22 minutes until the edges start to turn golden brown.
Remove from the oven and allow it to cool slightly, then use a sharp knife or pizza cutter to slice into breadstick shapes.
Return the slices to the oven for an additional 5 minutes if a crisper texture is desired, then serve warm.
