200g Extra Firm Tofu
100g Shelled Edamame
1 Large Egg

1 tsp Fresh Ginger
2 tbsp Scallions
PREPARATION
Press the tofu between paper towels to remove excess moisture, then cut into small cubes.
Heat the sesame oil in a large skillet over medium-high heat. Add the cubed tofu and fry until golden and crispy on all sides.
Add the minced garlic and grated ginger to the pan and sauté briefly until fragrant.
Fold in the cauliflower rice and stir-fry for about 3-4 minutes until it starts to soften.
