INGREDIENTS
7 ounces Salmon Fillet
1 tsp Olive Oil (for searing)
1 cup Green Beans
1 cup Cauliflower
2 tbsp Plain Nonfat Greek Yogurt
1 tsp Olive Oil (for mash)
1 clove Garlic
Salt and Black Pepper to taste
PREPARATION
Pat the salmon dry and season both sides with salt and black pepper.
Heat 1 teaspoon of olive oil in a non-stick skillet over medium-high heat.
Place the salmon, skin-side down if applicable, in the skillet and sear for about 3-4 minutes per side until cooked through and nicely caramelized.
While the salmon cooks, steam the green beans until they become tender-crisp. In a small pan, lightly sauté the minced garlic in a few drops of water or a tiny drizzle of olive oil, and then toss with the steamed green beans.
For the cauliflower mash, steam the cauliflower until very soft. Transfer to a bowl and add 1 teaspoon of olive oil along with 2 tablespoons of plain nonfat Greek yogurt, and a pinch of salt and pepper. Mash until smooth and creamy.
Plate the seared salmon alongside a serving of garlic green beans and a generous scoop of cauliflower mash. Serve immediately.
