PREPARATION
Preheat your oven to 400°F (200°C). Peel and cube the sweet potato into bite-sized pieces.
Toss the sweet potato cubes with olive oil, cumin, smoked paprika, salt, and pepper. Spread them on a baking sheet and roast in the oven for about 20-25 minutes until tender and lightly caramelized.
While the sweet potatoes roast, rinse and drain the black beans. Warm them on the stovetop over low heat, seasoning lightly with salt and pepper.
In a non-stick skillet over medium heat, pour in the egg whites and gently scramble until softly set. Season lightly with salt and pepper.
