Savor the vibrant flavors of succulent shrimp brushed with a zesty citrus-garlic sauce, perfectly paired with tender fresh rice noodles. This dish strikes a balance between bright lemon notes and a subtle hint of heat, making it a refreshing yet satisfying meal.
INGREDIENTS
6 oz Shrimp, peeled and deveined
2 oz Fresh Rice Noodles (dry)
2 cloves Garlic
1 Lemon
1 tsp Extra Virgin Olive Oil
Pinch of Chili Flakes
2 tbsp Fresh Cilantro
Salt & Pepper to taste
PREPARATION
Prepare the rice noodles by soaking or boiling them according to package instructions until they are tender, then drain and set aside.
Pat the shrimp dry and season lightly with salt and pepper.
Mince the garlic finely and zest the lemon if desired, then cut the lemon in half for juicing later.
Heat the olive oil in a large skillet over medium-high heat. Add the minced garlic and a pinch of chili flakes, stirring for about 30 seconds until fragrant.
Add the shrimp to the skillet and cook for 2-3 minutes on each side, or until they turn pink and are just cooked through.
Reduce the heat to medium, add the cooked rice noodles to the skillet along with the juice of the lemon. Toss gently to combine all flavors.
Season with additional salt and pepper as desired.
Garnish with fresh cilantro before serving.
