INGREDIENTS
6 oz Salmon Fillet
1 cup Asparagus
1 cup Cauliflower (chopped)
1 Garlic clove
1 tsp Olive Oil
2 tbsp Unsweetened Almond Milk
Salt & Pepper to taste
PREPARATION
Pat the salmon fillet dry and season with salt and pepper on both sides.
Heat a non-stick skillet over medium-high heat and add the olive oil.
Place the salmon skin-side down in the skillet. Sear for about 3-4 minutes until nicely browned, then flip and cook for an additional 3-4 minutes until just cooked through. Remove from heat and let rest.
Meanwhile, steam the asparagus until tender, about 4-5 minutes. Season lightly with salt and pepper.
For the cauliflower mash, steam the chopped cauliflower until very tender, approximately 8-10 minutes. In a food processor or blender, combine the steamed cauliflower, garlic clove, unsweetened almond milk, and a pinch of salt and pepper. Blend until smooth and creamy. If desired, adjust texture with a little more almond milk.
Plate the seared salmon alongside the steamed asparagus and a generous scoop of garlic cauliflower mash. Serve immediately.
