300g Extra Firm Tofu
1 cup Broccoli
1/4 cup Shelled Edamame
1 tsp Sesame Oil
1 tsp Fresh Ginger (grated)
2 cloves Garlic (minced)
1 tbsp Soy Sauce
1 tsp Rice Vinegar
1 tsp Sesame Seeds
PREPARATION
Preheat the oven to 400°F.
Press the tofu for at least 15 minutes to remove excess water, then cut it into 1-inch cubes.
In a bowl, toss the tofu cubes lightly with half of the sesame oil, salt, and a pinch of pepper. Arrange them on a baking sheet lined with parchment paper.
Add the broccoli florets (and edamame if desired) to the baking sheet, drizzling with a little extra sesame oil and seasoning lightly.
Roast the tofu and vegetables for 25-30 minutes, turning halfway, until the tofu is golden and the broccoli is tender with crispy edges.
While roasting, prepare the sauce by mixing grated ginger, minced garlic, soy sauce, rice vinegar, and sesame oil in a small bowl.
Once the tofu and broccoli are done, transfer them to a serving bowl and drizzle the sesame ginger sauce over the top.
