PREPARATION
Preheat a non-stick skillet over medium heat and add the olive oil.
Dice the turkey sausage and small tomato, and roughly chop the spinach.
Pour the egg whites into a bowl and season lightly with salt and pepper.
Add the turkey sausage to the skillet and sauté for 1-2 minutes until slightly browned.
Add the chopped spinach and tomato to the skillet and cook until the spinach wilts, about 1 minute.
Pour in the egg whites and gently scramble, cooking until the eggs are set but still soft.
