INGREDIENTS
6 oz Beef Liver (approx. 170g)
1 medium Onion (approx. 110g)
2 cloves Garlic (approx. 6g)
1 tbsp Olive Oil (approx. 13.5g)
3 sprigs Fresh Thyme
3 sprigs Fresh Parsley
Salt and Pepper to taste
PREPARATION
Pat the beef liver dry and season with salt and pepper on both sides.
Thinly slice the onion and mince the garlic.
Heat the olive oil in a large skillet over medium-high heat.
Add the onions to the skillet, cooking slowly until they become soft and caramelized, about 8-10 minutes. Stir occasionally to prevent burning.
Push the onions to the side of the pan and add the minced garlic, cooking for about 1 minute until fragrant.
Place the liver in the skillet and sear for about 2-3 minutes on each side until browned on the outside but still slightly pink inside.
Toss in the fresh thyme and parsley during the last minute of cooking to infuse the liver with herbaceous aroma.
Combine the liver with the caramelized onions on the plate and serve immediately.
