Enjoy a beautifully balanced dinner featuring a perfectly seared salmon fillet accompanied by tender steamed asparagus and a creamy cauliflower mash. This dish brings together fresh flavors and subtle richness for a satisfying, nutrient-packed meal.
INGREDIENTS
5.5 oz Salmon Fillet
1 cup Asparagus
1 cup Cauliflower
1 tsp Olive Oil (for searing)
1 tsp Olive Oil (for mash)
1 tsp Unsalted Butter
1 tbsp Low-Fat Milk
Salt and Pepper to taste
PREPARATION
Pat the salmon dry and season both sides with salt and pepper.
Heat a non-stick skillet over medium-high heat and add 1 teaspoon of olive oil. Once hot, place the salmon skin-side down and sear for about 3-4 minutes until a golden crust forms.
Carefully flip the salmon and continue cooking for another 3-4 minutes until the fish is just cooked through. Remove from heat and let it rest.
Meanwhile, steam the asparagus in a steamer or using a steaming basket over boiling water for 4-5 minutes until tender yet crisp. Season lightly with salt and pepper.
For the cauliflower mash, steam the cauliflower florets until very tender (about 8-10 minutes). Transfer to a blender or use a potato masher to blend with 1 teaspoon olive oil, 1 teaspoon butter, and 1 tablespoon low-fat milk until smooth. Season with salt and pepper to taste.
Plate the salmon with a side of steamed asparagus and a serving of cauliflower mash. Serve immediately.
