Enjoy these savory, herb-infused cauliflower breadsticks boasting a light almond flour crust interlaced with roasted garlic and melty mozzarella—a creative twist on a classic breadstick that’s both satisfying and nourishing.
INGREDIENTS
1 cup Cauliflower Rice (107g)
2 large Eggs
1/3 cup Almond Flour (40g)
2 ounces Part-Skim Mozzarella Cheese, shredded (56g)
3 Roasted Garlic Cloves (30g)
2 tbsp Mixed Fresh Herbs
Salt and Pepper to taste
PREPARATION
Preheat your oven to 400°F.
If not already roasted, wrap a head of garlic in foil and roast in the oven for about 30-35 minutes until soft. Once cooled, extract 3 cloves of roasted garlic.
In a large bowl, combine the cauliflower rice, 2 lightly beaten eggs, almond flour, shredded mozzarella, and mashed roasted garlic cloves.
Stir in the mixed fresh herbs and season with salt and pepper. Mix until a cohesive dough forms.
Line a baking sheet with parchment paper. Transfer the dough onto the sheet and press it into a rectangular shape about 1/2-inch thick.
Score the dough lightly with a knife into breadstick shapes.
Bake for 18-22 minutes or until the edges turn a light golden brown and the top appears set.
Remove from the oven, allow to cool slightly, then cut along the scored lines and serve warm.
