INGREDIENTS
200g Prawns
150g Cauliflower (riced)
1 tbsp Extra Virgin Olive Oil
2 Garlic Cloves
2 tbsp Lemon Juice
2 tbsp Fresh Parsley
Salt and Pepper to taste
PREPARATION
Rinse and pat dry the prawns. Season lightly with salt and pepper.
In a large skillet over medium-high heat, warm the olive oil until shimmering.
Add minced garlic and sauté for about 30 seconds until fragrant, being careful not to brown.
Place the prawns in the skillet and sear on each side for 2-3 minutes until they turn pink and opaque. Squeeze half of the lemon over the prawns during cooking.
While the prawns cook, heat another pan over medium heat and add the riced cauliflower. Cook for 4-5 minutes, stirring occasionally, until slightly tender.
Finish the cauliflower rice by stirring in chopped fresh parsley, the remaining lemon juice, and season with salt and pepper.
Plate the herb cauliflower rice, top with the garlic-lemon prawns, and serve immediately.
