1 medium Sweet Potato
1 tbsp Maple Syrup

PREPARATION
Preheat the oven to 400°F (200°C).
Peel and cut the sweet potato into cubes. In a bowl, toss the sweet potato cubes with olive oil, maple syrup, salt, and pepper until evenly coated.
Spread the sweet potato cubes on a baking sheet in a single layer and roast for 25-30 minutes, stirring halfway through to ensure even cooking.
While the sweet potatoes roast, pat the haddock fillet dry with paper towels. Season both sides with salt and pepper.
