PREPARATION
Preheat the oven to 400°F. Thinly slice the sweet potato into 1/4-inch rounds. Arrange them on a baking sheet lined with parchment paper, and lightly season with salt and pepper. Roast for 20-25 minutes until tender and slightly crisp on the edges.
