INGREDIENTS
7 oz Salmon Fillet
1/2 cup steamed Asparagus
1/2 cup Cauliflower mash
1/2 tsp Olive Oil
1 clove Garlic
1 tbsp Lemon Juice
Salt and Pepper to taste
PREPARATION
Pat the salmon fillet dry and season both sides with salt and pepper.
Heat a non-stick skillet over medium-high heat and add 1/2 tsp of olive oil.
Place the salmon fillet skin-side down (if applicable) and sear for about 3-4 minutes until a golden crust forms.
Flip the salmon and cook for another 3-4 minutes until the fish is just cooked through.
In a steamer basket over boiling water, place the asparagus and steam for 3-4 minutes until tender but still crisp.
For the cauliflower mash, steam cauliflower florets until very tender (about 8-10 minutes). Transfer to a bowl, add a minced garlic clove, 1 tbsp lemon juice, salt and pepper, and mash until smooth.
Plate the seared salmon alongside the steamed asparagus and a serving of cauliflower mash. Drizzle with any remaining lemon juice if desired and serve immediately.
