PREPARATION
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
Break the cauliflower into florets and pulse in a food processor until it forms a rice-like texture. Microwave the riced cauliflower in a microwave-safe bowl for 4-5 minutes until soft, then let it cool slightly before transferring to a clean kitchen towel and squeezing out excess moisture.
