INGREDIENTS
6 oz Ground Chicken (170g)
1 medium Potato (150g)
1/2 Red Bell Pepper (75g)
1/4 Yellow Onion (40g)
1 tsp Olive Oil (5g)
1 tsp Mixed Dried Herbs
Salt and Pepper to taste
PREPARATION
Preheat your oven to 425°F.
Dice the potato into small cubes for a crispy texture. Toss with 1/2 tsp olive oil, salt, and pepper, then spread on a baking sheet.
Roast the potatoes in the oven for about 20-25 minutes or until crispy and tender, stirring halfway through.
While the potatoes roast, finely dice the red bell pepper and yellow onion.
Heat the remaining 1/2 tsp olive oil in a large nonstick skillet over medium heat.
Add the diced onion and bell pepper to the skillet and sauté until they begin to soften, about 3-4 minutes.
Add the ground chicken to the skillet, breaking it up with a spatula. Season with mixed dried herbs, salt, and pepper. Cook until the chicken is browned and cooked through, about 6-8 minutes.
Once the potatoes are crispy, add them to the skillet with the chicken and vegetables. Mix gently to combine and heat through.
Taste and adjust seasoning as needed before serving.
