INGREDIENTS
6.5 ounces Salmon Fillet
1 cup Green Beans
1 cup Cauliflower florets
1 teaspoon Olive Oil
1 clove Garlic
PREPARATION
Pat the salmon fillet dry and season lightly with salt and pepper.
Heat a nonstick skillet over medium-high heat and add half of the olive oil.
Place the salmon skin-side down in the skillet and sear for about 3-4 minutes, then flip and cook for another 3-4 minutes until the interior is just opaque.
Meanwhile, bring a small pot of water to a boil and add the cauliflower florets. Cook until tender, about 8-10 minutes, then drain.
Mash the cauliflower with a fork or immersion blender until smooth. Stir in a minced garlic clove (or press through a garlic press) and a small drizzle of olive oil, seasoning with salt and pepper to taste.
In another pan, heat the remaining olive oil over medium heat. Add whole or sliced garlic and sauté briefly until fragrant, then add the green beans. Sauté for about 4-5 minutes until crisp-tender, seasoning with salt and pepper.
Plate the seared salmon alongside a portion of the garlic green beans and a scoop of the creamy cauliflower mash. Serve immediately.
