INGREDIENTS
1/2 cup Rolled Oats (40g)
4 Egg Whites (approx. 120g)
1 scoop Whey Protein Isolate (30g)
1 medium Ripe Banana (118g)
1/2 cup Unsweetened Almond Milk (120g)
1 teaspoon Baking Powder (4g)
1 teaspoon Cinnamon (2.6g)
1 teaspoon Coconut Oil (5g)
PREPARATION
In a blender, combine the rolled oats, egg whites, whey protein isolate, ripe banana, unsweetened almond milk, baking powder, and cinnamon. Blend until the mixture forms a smooth batter.
Preheat a non-stick skillet over medium heat and add coconut oil, swirling to evenly coat the surface.
Pour about 1/4 cup of the batter per pancake onto the skillet. Cook until bubbles form on the top and the edges begin to look set, around 2-3 minutes.
Flip the pancakes carefully and cook for another 2 minutes until golden and cooked through.
For caramelizing, slice the remaining banana into thin rounds and add to a separate pan over medium heat if a more intense caramel flavor is desired, or serve the sliced banana on top of the pancakes.
Serve the pancakes warm, topped with the caramelized banana slices.
