PREPARATION
Peel and dice the sweet potato into small cubes. Rinse and dice the red bell pepper, finely chop the yellow onion, and roughly chop the spinach.
Slice the turkey sausage into rounds.
Heat the olive oil in a non-stick skillet over medium heat. Add the diced sweet potato and sauté for about 5 minutes until they start to soften.
