INGREDIENTS
6 oz Salmon Fillet
5 Asparagus Spears
1 cup Cauliflower
1/4 cup Nonfat Plain Greek Yogurt
1 tsp Olive Oil
1 clove Garlic
Salt & Pepper to taste
PREPARATION
Pat the salmon dry and season both sides with salt and pepper.
Heat the olive oil in a skillet over medium-high heat until shimmering.
Place the salmon skin-side down (if applicable) in the skillet. Sear for about 3-4 minutes per side or until desired doneness.
While the salmon is cooking, steam the asparagus spears in a steamer or a covered pan with a splash of water for approximately 4-5 minutes until tender but still crisp.
For the cauliflower mash, steam the cauliflower florets along with the garlic clove until very tender (about 8-10 minutes).
Transfer the steamed cauliflower and garlic to a blender or food processor, add the Greek yogurt, and blend until smooth. Season with salt and pepper to taste.
Plate the seared salmon alongside the steamed asparagus and a serving of the garlic cauliflower mash. Serve warm.
