Heat a non-stick skillet over medium-high heat and add half of the olive oil. Once shimmering, place the salmon skin-side down (if applicable) and sear for about 3-4 minutes until a golden crust forms.
Flip the salmon and continue cooking for an additional 3-4 minutes, or until the fish is cooked through but still moist. Remove the salmon from the skillet and set aside.
