Enjoy succulent herb-garlic marinated chicken skewers paired with perfectly grilled halloumi tucked in a warm whole wheat pita. The smoky char from the grill on colorful bell peppers and red onions, combined with a citrusy burst from lemon, creates an explosion of Mediterranean flavors in every bite.
INGREDIENTS
4 oz Chicken Breast
1 oz Halloumi Cheese
1 Whole Wheat Pita Bread
0.5 medium Bell Pepper
0.25 medium Red Onion
2 cloves Garlic
2 Tbsp Lemon Juice
1 tsp Olive Oil
1 tsp Dried Oregano
PREPARATION
Cut the chicken breast into bite-sized cubes and place in a bowl.
Add minced garlic, lemon juice, olive oil, and dried oregano to the chicken. Mix well and let marinate in the fridge for at least 30 minutes.
While the chicken marinates, cut the bell pepper into chunks and slice the red onion into wedges.
Thread the marinated chicken, bell pepper chunks, and red onion wedges onto skewers.
Preheat the grill or grill pan over medium-high heat. Grill the skewers for about 10-12 minutes, turning occasionally until the chicken is cooked through and has a nice char.
Simultaneously, slice the halloumi cheese into 1/4-inch slices and grill them for about 2-3 minutes per side until grill marks appear.
Warm the whole wheat pita on the grill or in a toaster oven for a minute.
Assemble by stuffing the warm pita with the grilled chicken skewers and topping with the grilled halloumi. Optionally drizzle any remaining marinade over the filling.
Serve immediately and enjoy your Mediterranean-inspired meal.
