1 tsp Ginger, minced
1 tbsp Low Sodium Soy Sauce
1 tsp Rice Vinegar
1 tsp Honey
1 tsp Olive Oil
PREPARATION
Press the extra-firm tofu to remove excess water, then cut into bite-sized cubes.
Heat the olive oil in a large non-stick skillet or wok over medium-high heat.
Add the minced garlic and ginger, stirring for about 30 seconds until fragrant.
Add the tofu cubes to the skillet and stir-fry until they begin to develop golden, crispy edges, about 5-6 minutes.
Toss in the chopped broccoli, sliced red bell pepper, and sliced carrot. Stir-fry for an additional 3-4 minutes until the vegetables are tender but still crisp.
Stir in the shelled edamame and mix well.
In a small bowl, combine the low sodium soy sauce, rice vinegar, and honey. Pour this mixture over the tofu and vegetables.
