3 Tbsp Hummus (45g)
0.75 cup Roasted Chickpeas (110g)
150g Extra-Firm Tofu
20g Fresh Spinach
30g Cucumber slices
40g Tomato slices
20g Red Onion slices
PREPARATION
Preheat the oven to 400°F. Toss a drained and rinsed can of chickpeas with olive oil, salt, pepper, and dried oregano, then spread them on a baking tray. Roast for 20-25 minutes until crispy.
While the chickpeas are roasting, drain and press the extra-firm tofu to remove excess moisture. Cut into thin strips and lightly pan-fry in a non-stick skillet with a few drops of olive oil and a sprinkle of Mediterranean herbs, until all sides are golden and crisp.
Lay the whole wheat wrap on a flat surface. Spread a generous layer of hummus evenly over the wrap.
Arrange fresh spinach, cucumber slices, tomato slices, and red onion slices in the center of the wrap.
Once the roasted chickpeas are done, allow them to cool slightly and add them on top of the veggies, followed by the crispy tofu strips.
