Enjoy perfectly seared salmon complemented by lightly garlic-infused green beans and a smooth, creamy sweet potato mash. This dish strikes a delightful balance of savory and subtly sweet flavors, making it both nutritious and appetizing.
INGREDIENTS
6 ounces Salmon Fillet
1 cup Green Beans
1 Garlic Clove
1/2 tbsp Olive Oil (for green beans)
1 medium Sweet Potato
1/2 tbsp Olive Oil (for mash)
Salt and Pepper to taste
PREPARATION
Pat the salmon fillet dry and season with salt and pepper.
Heat a non-stick skillet over medium-high heat. Place the salmon skin-side down and sear for about 3-4 minutes on each side, until just cooked through and a nice crust forms.
While the salmon is cooking, steam the green beans until tender-crisp, about 4-5 minutes. In a small pan, gently heat the 1/2 tablespoon of olive oil with the minced garlic for a minute and then toss the cooked green beans in this garlic oil mixture.
Peel and cube the sweet potato. Boil the cubes in lightly salted water until very tender, about 10-12 minutes. Drain and mash the sweet potato with the remaining 1/2 tablespoon of olive oil, adding a pinch of salt and pepper to taste.
Plate the seared salmon alongside a generous serving of garlic green beans and a scoop of sweet potato mash. Serve warm and enjoy your balanced, delicious dinner.
