2 Garlic Cloves
1 inch Fresh Ginger
1 Scallion
PREPARATION
Press the tofu gently to remove excess moisture and cut it into small cubes.
Heat olive oil in a large non-stick skillet or wok over medium-high heat.
Add minced garlic and grated ginger; sauté for about 30 seconds until fragrant.
Add the cubed tofu and stir-fry until lightly golden on all sides, about 4-5 minutes.
Mix in the cauliflower rice and shelled edamame. Stir-fry for another 3-4 minutes until the cauliflower softens slightly.
Push the mixture to the side and crack the egg into the pan. Scramble the egg until just set and mix it into the stir-fry.
