INGREDIENTS
3 oz Lean Steak
1 piece Whole Wheat Tortilla
0.5 medium Red Bell Pepper
0.5 medium Green Bell Pepper
1 tbsp Shredded Cheese
1 tbsp Lime Juice
0.5 tsp Cayenne Pepper
1 pinch Salt
PREPARATION
Thinly slice the lean steak against the grain and marinate with lime juice, cayenne pepper, and a pinch of salt for at least 15 minutes.
While the steak marinates, thinly slice the red and green bell peppers.
Heat a non-stick skillet over medium-high heat, add the marinated steak slices, and cook until browned and cooked through, about 3-4 minutes per side.
Remove the steak from the skillet and set aside. In the same skillet, lightly sauté the bell peppers until they are softened but still retain some crunch, about 2-3 minutes.
Place the whole wheat tortilla in the skillet over medium heat, sprinkle half of the shredded cheese on one half of the tortilla, and then evenly distribute the cooked steak and sautéed bell peppers on top.
Fold the tortilla over to create a quesadilla and cook for about 2 minutes on each side until the cheese is melted and the tortilla is golden and crispy.
Remove from the skillet, slice into wedges, and serve warm.
