1 cup fresh spinach
1/2 cup sliced bell peppers
2 tsp olive oil
1 portion avocado (approx. 50g)
PREPARATION
Preheat a non-stick skillet over medium heat and add 1 tsp of olive oil.
Lightly sauté the sliced bell peppers until they begin to soften, then add the fresh spinach and cook until wilted. Transfer the sautéed vegetables to a plate.
In a bowl, whisk the egg whites until lightly frothy.
Wipe the skillet clean and add the remaining olive oil. Pour the egg whites into the skillet, swirling gently to coat the bottom evenly.
