INGREDIENTS
40g Rolled Oats
1 medium Ripe Banana
3 large Egg Whites
1 scoop Whey Protein Powder
1/4 cup Nonfat Greek Yogurt
1/2 tsp Baking Powder
1/2 tsp Cinnamon
1 tsp Coconut Oil
1 tbsp Maple Syrup (optional)
PREPARATION
Place the rolled oats in a blender and blend until a fine oat flour forms.
In a mixing bowl, mash the ripe banana thoroughly.
Add the egg whites, whey protein powder, nonfat Greek yogurt, blended oats, baking powder, and cinnamon to the mashed banana. Stir until well combined.
In a non-stick skillet over medium heat, warm the coconut oil. Pour a small ladle of the pancake batter into the skillet to form pancakes of your desired size.
Cook each pancake for about 2-3 minutes on one side until small bubbles form and the edges set, then flip and cook for another 2 minutes until golden brown.
For caramelizing the banana topping, slice a portion of the remaining banana. In a separate small pan, add a few drops of coconut oil and the banana slices. Sauté over medium heat for 1-2 minutes until the slices are lightly caramelized. Optionally drizzle with maple syrup for extra sweetness.
Stack the pancakes on a plate and top with the caramelized banana slices. Drizzle additional maple syrup if using, and serve warm.
