INGREDIENTS
4.5 oz Lean Top Sirloin Steak (128g)
100g Baby Potatoes
1 tsp Unsalted Butter
1 Garlic Clove
0.5 tbsp Fresh Rosemary
0.5 tbsp Fresh Thyme
1 tsp Olive Oil
Salt and Black Pepper to taste
PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper.
Wash the baby potatoes and cut them in halves if they are large; toss them with olive oil, a pinch of salt, and pepper.
Roast the potatoes in the oven for about 20-25 minutes until golden and tender, stirring halfway through.
While the potatoes roast, salt and pepper the lean top sirloin steak generously on both sides.
In a medium skillet over medium-high heat, add the steak and sear for about 3-4 minutes per side for medium-rare, or adjust time to desired doneness.
In the last minute of cooking, add the unsalted butter, garlic (lightly smashed), fresh rosemary, and thyme to the pan. Spoon the melted herb-garlic butter over the steak.
Remove the steak from the skillet and let it rest for a few minutes before slicing.
Plate the seared steak alongside the roasted baby potatoes. Drizzle any remaining herb butter from the pan over the steak for extra flavor and serve immediately.
