PREPARATION
Peel and dice the sweet potato into 1/2 inch cubes. Dice the red bell pepper and slice the red onion thinly.
Heat the olive oil in a large non-stick skillet over medium heat. Add the sweet potato cubes and sauté for about 8 minutes until they start to soften.
