150g Sweet Potato
1 Tbsp Fresh Ginger
2 Tbsp Mixed Fresh Herbs
3 oz White Mushrooms (85g)
1 tsp Olive Oil
1 Tbsp Lemon Juice
Salt & Pepper, to taste
PREPARATION
In a medium saucepan, add water, lemon juice, and mixed fresh herbs. Bring to a simmer over medium heat.
Season the chicken breast lightly with salt and pepper. Gently submerge the chicken in the simmering broth and poach for about 12-15 minutes, or until fully cooked. Remove and set aside.
While the chicken poaches, peel and dice the sweet potato. Boil in a separate pot until tender, approximately 10-12 minutes.
Drain the sweet potato and return to the pot. Add fresh grated ginger and a pinch of salt. Mash until smooth and silky. Adjust seasoning as needed.
